Family Game Night

Plan a Family Game Night this week. It's surprising how just 15 to 20 minutes of undivided, quality time with your children can make in your day. We like to have ours when dinner is over and homework has been done. It's a great transition into the before bed routine on a school night. Some great games to play are Jenga and Yahtzee.

What's for Dinner? - Baked Lasagna

Baked Lasagna
1 1/2 pounds ground beef
1/2 pound ground pork or Italian sausage
1 onion
1 Sm. Can of tomato sauce
1 can tomato paste
9 Wide Lasagna noodles
1 Lg. Can whole tomatoes - Tomato juice to liquefy
1 1/2 Tbsp. Oregano
Salt - Pepper to taste
1 clove garlic
1 Sm. Container cottage cheese
1 pound Mozzarella cheese
1 can Parmesan cheese

Brown meat with onion. Pour off grease. Add tomato sauce, tomato paste, and whole tomatoes(cut up) along with oregano, minced garlic, salt, and pepper. Simmer for 1 hour and tomato juice to liquefy if needed. Place 3 cooked lasagna noodles in bottom of a 9 X 13 baking dish. Over this layer of noodles spread sauce to cover, then cottage cheese, Parmesan cheese, and Mozzarella cheese. Layer more noodles, more sauce, and the 3 cheeses. When all ingredients have been layered bake for 45 minutes at 350* . Serve hot.

* This recipe freezes great. Make a double batch and/or freeze leftovers for another night to have a great meal when you don't have a lot of time.

* Serve with a dinner salad and garlic bread.

What Produce is in Season? - Apples

How to Choose
Look for apples that are firm, brightly colored, and free of bruises. The skin should be clean and shiny. A dull finish indicates the fruit may be past its prime.

How to Store
Apples do best in the fruit drawer of the refrigerator. At room temperature, they ripen too quickly and become mealy.

Shelf Life
Two weeks in the refridgerator; two days at room temperature.

Best Uses
Apples are delicious eaten out of hand, of course. They are also good baked in pies, roasted, and sauteed.

Kid Friendly Recipe
Fresh Applesause

Core and Roughly chop the pre-washed apples (leave the skins on). Simmer, covered, with 1/4 cup water, until very soft. Stir in cinnamon to taste. Puree in food processer if desired.

Healthy Family Recipes - IsaFruits Cocktail

1 Tbsp. IsaFruits
1/2 cup fresh, organic strawberries (sliced)
1/4 cup fresh, organic pineapple
1/4 cup fresh-squeezed orange juice
1/2 cup nonfat, unsweetened plain yogurt
10-12 ice cubes

Directions:

Blend well. Serve in a tall glass with a long straw. Cheers!

Recipe - Family Fajitas

Fajitas are a great family meal. You can have Mexican night at your house and the kids love it. Make these fajitas as the main dish. Some nachos or cheese crisp as an appetizer and some Spanish rice and refried beans for the side dishes.

Family Fajitas

1 lbs. round steak
1/2 red bell pepper, sliced
1/2 orange bell pepper, sliced
1/2 lb. mushrooms, sliced
1/2 onion, sliced
1 Tbsp. butter
1/2 bottle Italian dressing
4 Flour Tortillas

Marinate round steak in a ziploc bag with Italian dressing and refrigerate for 6 to 8 hours. Pan fry steak until cooked. In a separate skillet, cook bell peppers, mushrooms, and onion in butter until cooked. Meanwhile, slice the steak after it's cooked. Add to vegetables to reheat. Place even amounts of mixture in each tortilla. Add cheese and sour cream if desired.

This recipe is a great way to get kids to eat a good portion of protein along with some vegetables. The refried beans are a great source of fiber.

Evening Outdoor Activity

It is important that both our children and us parents get so physical activity each day. One of my favorite activities is going on a family bike ride after dinner. This gets our family out of the house together to get some fresh air. We can talk to each other about our day and get some exercise.

Plan some family activity this evening. It can be as little as 10 minutes but you will be surprised at how much better the whole family feels with a little attention and exercise.
