Recipe - Family Fajitas

Fajitas are a great family meal. You can have Mexican night at your house and the kids love it. Make these fajitas as the main dish. Some nachos or cheese crisp as an appetizer and some Spanish rice and refried beans for the side dishes.

Family Fajitas

1 lbs. round steak
1/2 red bell pepper, sliced
1/2 orange bell pepper, sliced
1/2 lb. mushrooms, sliced
1/2 onion, sliced
1 Tbsp. butter
1/2 bottle Italian dressing
4 Flour Tortillas

Marinate round steak in a ziploc bag with Italian dressing and refrigerate for 6 to 8 hours. Pan fry steak until cooked. In a separate skillet, cook bell peppers, mushrooms, and onion in butter until cooked. Meanwhile, slice the steak after it's cooked. Add to vegetables to reheat. Place even amounts of mixture in each tortilla. Add cheese and sour cream if desired.

This recipe is a great way to get kids to eat a good portion of protein along with some vegetables. The refried beans are a great source of fiber.
